If you are keen on health then there's no doubt you'll know about all the 'superfoods' that bloggers insist on using in their recipes. I am so reluctant to believe that these are the only way to lead a healthy, gluten free, sugar free or whatever you want 'free' life. If you can afford to buy all these superfood flours, of which some are £15 a kilo, then by no means be my guest, and to be honest I wish I could be you, however it is so simple to avoid this. As a student I have investigated varying ways to try and avoid or substitute these expensive ingredients. So of course the occasional dish will pop up on this blog!
For my first post about food obviously I had to start with breakfast - my favourite meal of the day. Most nights I have trouble sleeping because I am excited for breakfast, weird I know. Naturally, my breakfasts differ according to my day ahead, but I like to keep them pretty simple as anything too complex upsets my tummy and makes me feel like crap for the rest of the day. This is also due to countless tummy problems that I have, at one point doctors thought I had IBS (Irritable Bowel Syndrome), but then they put it down to feelings of excitement or conversley being anxious, anyway that's another story! My breakfasts also differ according to season, i.e in the winter I am more likely to make porridge and eggs, while in the summer it is fruit and yogurt. Enough about me, here are the ideas for YOU!
1. A Plate of Fruit
Boring! I know, but so delicious and so good for you that I can't resist. Admittedly this is a lot harder to do at uni, mainly because it simply doesn't fill me up for the day, and also, I don't do enough food shops in the week to keep the fruit fresh.
2. Smoothie Bowl
Unquestionably the most trendy thing to eat right now, but again so simple and tasty! The only difference between this and a normal smoothie is that some of the ingredients are frozen so that when blend them together you get an ice-cream texture rather than a liquid, so you eat it with a spoon - obviously.
This is frozen pineapple, frozen banana, frozen mango and nectarine. The nectarine wasn't frozen in order to get the mixture going a bit! Once poured into a bowl I added homemade granola and blended almonds - yum!
3. Greek Yogurt & Berries
Pretty obvious really, but blueberries apparently are high in antioxidants and prevent skin from ageing, scientists will probably prove this wrong tomorrow so eat up quick. Also, I didn't add honey because this is adding sugar, unless it is in its purest form, it will no doubt have been processed and sugar added to appeal to the nation, so I just avoid it.
